KADAI CHICKEN

Kadai Chicken literally means Chicken cooked in a Kadai. Kadai is a Indian cooking pot.I got this recipe from a family friend. I have made it 1-2 times and it came out well. Hope you will also like it. This spicy Chicken dish is a good compo with Chapathi/ Roti/ Naan/ Rice/ Fried Rice etc...Here is the recipe.

Prep Time: 20 minutes
Cook Time: 30 to 40 minutes.
KADAI CHICKEN

   

Ingredients:
   

1 kg Chicken  
4 tsp Red chillie powder/Lal Mirch powder/Chuvanna Mulaku powder
3 tsp Coriander powder/ Dhaniya powder/Kothamalli powder
1 tsp Lemon juice/Nimbu/Cherunaranga
300 gm Cocanut oil
12 flakes Garlic/Lasun/Veluthulli  
2 inch Ginger/Adrak/Injee
50 gm Butter/Makhan/Venna
7 Red Chillie/ Lal Mirch/Chuvanna Mulaku
25 gm Raisins/Dry Angoor/Dry Munthiri
25 gm Cashew nut/Kaju/Kasuandi parippu
5 tbsp Thanthuri Masala
5 tbsp Chat Masala
5 tbsp Garam Masala
2 tsp Tumeric powder/Haldi powder/Manjal powder
1tsp Black Pepper /Kali mirchi /Kurumulaku
1 Cocanut (Grated)
1/2 kg Tomatoes
25 gm Cinnamon/Dalchini/Karuvapatta
20 gm Cloves/Lavang/Grambu
4 nos Onion//Piaz/Ulli (Savala)
3 tbsp Curry leaves/Currypatta/Karivepila
3 tbsp Coriander leaves/Kotmir/Kothamalli ela
Salt to taste.

Method:
  
1.Heat a pan with coconut oil. Add one part of ginger-garlic paste, curry leaves, grated coconut stir well for 3 minutes and add 2tsp Chilli powder, 1 tsp turmeric powder and coriander powder stir a minute and set aside.
2. Heat the oil in a pan. Add finely chopped onion and stir till it become light brown. Add chopped tomatoes stir till it become light soft.
3. Grind onion, tomatoes, Black pepper, Cinnamon and Cloves.
4. Take a kadai with 3 glasses of water, heat it and add 1st and grinded iteams, Add salt to taste. Cook it till boil. Now gravy is ready.
5. Cut the Chicken into medium size pieces and clean it well. Marinate chicken pieces with little salt, 1 tsp turmeric powder and 2 tsp chillie powder for 15 minutes.
6. Take a pan with coconut oil, heat it , fry the chicken in a medium flame till it light brown.
7. Take a kadai with butter and heat it. Add ginger-garlic pieces,red chillie(cuted lengthwise) stir a minute and add Thanthuri masala, Garam masala and Chat masala. Stir in a medium flame. Add fried Chicken, gravy and lemon juice. Cook for 5 minutes and turn off the flame.
8. Transfer the kadai Chicken to the serving bowl and garnish with coriander leaves, raisins, cashew nuts.
   
Tips:
1. If you don't have garam masala add chicken masala.

CHAKKA PUZHUKKU (JACKFRUIT PUZHUKKU)

       
        About the recipe


                   This is a traditional,tasty Chakka Puzhukku (Jackfruit Puzhukku) recipe.Popular in the some area of South Kerala.In the Malabar area people make Iddi Chakka Thoran (Very small raw Jackfruit Thoran), Chakka Thoran, Mezhukkupuratti, Chakka Upperi etc..Do you know anything about Chakka Puzhukku?. Have you ever tasted it?. I would like to know from you. Iam from Malabar area and I was not aware about this recipe until my marriege. I came to know about this recipe from my wife Suja. She is from South Kerala.
               
                  Chakka Puzhukku with Pork curry OR Mutton curry is best combination. I have made it several times and it is tasty and a different dish.

   
         Ingredients  

           .  Jackfruit ( Little before ripe stage/ Nannai mootha Chakka ) - 1/2
             Shallots ( Small onion / Cheriya Ulli / Sambar ulli ) - A handful
             Garlic / Lasun / Veluthulli - 5 flakes
             Cumin seeds / Zira / Jeerakam - 1/2 tsp
             Aniseeds or fennel /Sounf / Perumjeerakam -1/2tsp
             Garam masala - ( Optional ) - 1/2 tsp
             Green chilli /Hara mirch / Pachamulaku -5 nos
             Black pepper /Kali mirchi /Kurumulaku - 1 tsp
             Turmeric / Haldi / Manjal - 1/2 tsp
             Coconut / Narial / Nalikeram -1/2 (Grated )
             Coriander powder / Dhaniya powder / Kothamalli powder - ( Optional ) - 1/2 tsp
             Coconut oil / Narial ka Thel / Velichenna - 5 tsp
             Curry leaves /Curry patta / Kariveppila - A handful
             Salt to taste.        
           Method

            1. Before cutting the Jackfruit grease your both hands and knife with Cocanut oil. When we cut the Jackfruit it will leave milky like thing which is so sticky.
 
 
 
 

            2. Then cut the Jackfruit into big two pieces. Take one half or as you required. Cut it again and take the flakes and remove the seeds. cut it into small pieces OR cut it into lengthwise.
 
 
 
     
 

 
 
 
 

 
 
 
 

            3. Crush shallots, garlic, cumin seeds, fennel, green chilli, black pepper, grated coconut, curry leaves lightly.
 
            Take a kadai with Jackfruit pieces and pour 2 to 3 glasses of water.Add salt, turmeric powder and put a lid on kadai. Cook it in a medium flame. After 5 minutes of cooking add crushed items and garam masala, coriander powder. Don't stir. put a lid on kadai and this may take 10 minutes. Put off the flames and open the lid . Add 5 tsp coconut oil at the end to get a great flavor.Stir well.

ROTI VADA (BREAD VADA)

There are different types of Vada in Kerala. Parippu Vada (Dal Vada), Uzhunnu Vada (Black gram Vada), Ulli Vada (Onion Vada) etc....are popular. Here I tried another one, its main ingredient is sliced Bread. A tasty, spicy snacks.Try it and enjoy.

Prep time: 15 minutes
Cook time:30 minutes

Ingredients:

Roti ( Bread sliced) - 6 nos
Eggs - 2 nos
Onion - 2 nos
Green Chilli - 4 nos
Ginger - 2 inch piece
Curry leaves - 3 sprigs
Coriander leaves - a handful
 Coconut oil
Salt to taste


Method:

1) Take 6 pieces of sliced Bread and crush it by hand finely.

2) Chop onion, Green chilli, Ginger, Curry leaves, Coriander leaves finely.

3) Add chopped ingredients, 2 eggs and salt to the crushed Bread and mix it well.

4) Wet your hands and make 8 to 10 equal size balls with the mixture. Make the balls as a round shape by pressing gently it with your palm.

5) Pour enough oil into a deep bottom pan and heat it, when the oil is hot reduce the flame and deep fry the Bread Vadas by turning both sides.

6) Serve it hot.

TIPS

You can replace onion and green chilli by shallots (Cheriya ulli/small onion) and red chillies.
