Summary:
Natural / Wild Mushroom the wonderfully tasty fungus, the fleshy body of a fungus, typically seen on soil. There are lot of varieties of mushrooms available. Some are very rare that, they only grow for a few days or one week during the year. but most mushrooms on the market are commercially grown on farms. A few days back I got some natural/wild mushrooms from my backyards and from paddy fields.Every year in the monsoon, rainy season we will get natural mushrooms either from backyards, paddy field or near by forest.

INGREDIENTS :
Washed and cleaned Natural / Wild Mushrooms.................................................2 cups
Green chillies ( Finely chopped )...........................................................................2 nos
Chilli Powder..........................................................................................................1 tsp
Shallots ( Finely chopped )....................................................................................4 nos
Ginger-Garlic ( Finely chopped )..........................................................................1 tsp each
Chilli sauce............................................................................................................1 tbsp
Soya sauce............................................................................................................2 tbsp
Turmeric powder..................................................................................................1/4 tsp
Corn flour.............................................................................................................1 tsp
Coconut oil...........................................................................................................2 tbsp
Salt to taste.
DIRECTIONS :
1. Heat a pan with oil, when it is hot, Add finely chopped ginger-garlic, green chillies, shallots and saute for a minute.
2. Add chilli powder, turmeric powder and stir well.
3. Add the mushrooms and salt. cook for 7 minutes in a medium flame.
4. Now add the dissolved corn flour ( Dissolve the corn flour in 1 or 2 tbsp of water ), chilli sauce, soya sauce and saute for 3 minutes. Now Special Kattu Koon Fry / Special Natural/Wild Mushroom Fry is ready. Enjoy it.
TIPS :
* When picking natural/wild mushrooms beware of poisonous one.
* Unless you are well-known in mushrooms, particularly in identification of Poisonous ones, It is wise to purchase your mushrooms from a grower or grocer.
* After washing and cleanig of mushrooms, they absorb little water and it is enough for cooking so that don't put water while cooking.
