THENGA MUTTA THORAN / COCONUT EGG THORAN

Thenga Mutta Thoran / Coconut Egg Thoran

Summary :

A nutritional healthy Thenga Mutta Thoran / Coconut Egg Thoran / Scrambled Egg Kerala ( Indian ) style can be made in minutes. Egg can be used as a combination iteam to prepare a few different Thoran like Carrot Egg Thoran, Cabbage Egg Thoran..etc. I like egg and I make it frequently. This side dish is popular in Kerala. A side dish recipes for rushed times. I hope you like it. With regards..





Ingredients :


1) Egg............................................................................................4 nos
2) Onion.........................................................................................2 nos, Finely chopped.
3) Green Chillies...........................................................................6 nos, Finely chopped.
4) Ginger.......................................................................................1 tsp, Finely chopped.
5) Coconut.....................................................................................1/2 OR 1 cup, grated.
6)  Mustard seeds.........................................................................1/2 tsp
7) Curry leaves.............................................................................2 sprigs
8) Coconut oil / Refined oil..........................................................2 tbsp
9) Black pepper powder...............................................................1 tsp
10) Salt to taste.


Directions :


1. Heat a kadai/pan with coconut oil and put mustard seeds, when it crackle add curry leaves, finely chopped onion, green chillies, ginger, grated coconut, black pepper powder and salt. Stir it.


2. Break eggs one by one and pour into kadai/pan.



3. Mix well and fry for 4 to 5 minutes. Now Coconut Egg Thoran is ready. Serve with rice.

                                              


Tips :

1. 1/4 tsp turmeric powder can use if you like. ( optional )
2. Instead of green chilli, you can put red chilli powder.
