1.PRAWN PICKLE 2.BRINJAL PICKLE 3.PAPPAYA PICKLE.

Kerala style Prawn pickle,Brinjal pickle,and Pappaya pickle are there on this day to comfort the pickle lover's
soul.Try this and taste the different.
1.PRAWN PICKLE:
                  
Ingredients:
250gms Prawn
2tsp Pepper powder
1tspKashmiri chilli
1tsp Chilli powder
1/2tspTurmeric powder
1tspMustard seeds
1/2tspFresh ginger-garlic paste
1/2tspAsafoetida/Hing/Kayam
Cocanut oil
Vinegar
Curry leaves.
Step1: De shell,de-vein and clean the prawns.Add salt,pepper powder,turmeric powder and set aside for 15 minutes.After that fry it.

Step2: Take a pan with cocanut oil, when it is hot add mustard seeds,curry leaves,ginger-garlic paste,asafoetida powder,kashmiri chilli and chilli powder.Add fried prawn and stir well and finish with little vinegar.When it is cool
keep it in a bottle.

2.BRINJAL PICKLE;

Ingredients:

1/2kgBrinjal (cut into small square pieces)
1tspTurmeric powder
1tsp each fresh ginger-garlic paste (1tsp ginger-garlic cuted in a small pieces)
1/2tspFennygreek/Methi/Uluva
3/4cupSeasame oil.
4Shallots(small onion/sambar onion) crushed
1dstspSugar
Salt to taste
3tspMustard seeds
1/4cup Vinegar.
3tspChilli powder
2tspKashmiri chilli
2nosGreen chilli(cut into small pieces)

Method:

Take chopped brinjal.Add salt and tumeric powder.Take a pan with seasame oil and fry it.
Grind turmric powder,ginger-garlic mustard seeds,and fennygreek powder with vinegar.
Heat a pan pour 3/4 cup of seasame oil,add mustard seeds,crushed onions ginger-garlic (cut in to small pieces) and grinded items.Then add fried
brinjal,vinegar,sugar,salt.Cook for 5minutes.


3. PAPPAYA PICKLE;

Ingredients:

2cupPappaya (chopped small pieces)
1tspGinger-Garlic(both chopped small pieces)
5nosGreen chilli (cut into rounds)
1tspChilli powder
1/2tspTurmeric powder
1tspAsafoetida/Hing/Kayam
5tspVinegar
Curry leaves
Salt to taste.
Cocanut oil

Method:

Put the small pieces of pappaya to hot water for a minute and take and set aside.
Heat a pan with cocanut oil,Add curry leaves,ginger-garlic,green chilli,turmeric powder,chilli powder and asafoetida powder.Then add the pappaya pieces and stir well.Finish with vinegar.
