URULAKIZHANGU OMELETTE / POTATO OMELETTE

  We in Kerala usually makes Omlette with onion but we can prepare Omlette with Urulakizhangu, Coconut etc....Uralakizhangu Omlette is a  tasty one. We usually makes this for lunch with rice.We can prepare it very easily and quickly. Try this easy to follow Kerala ( Indian ) style Urulakizhangu Omelette.

INGREDIENTS:


* Potato/Aloo/Urulakishangu......................1 ( Small one,Boiled )
* Onion/Piaz/Ulli (Savala)...........................1 ( Small one )
* Eggs/Unda/Kozhi mutta............................2 nos
* Chilli powder/Mirch/Mulaku powder......2 tsp
* Pepper powder/Kalimirch/Kurumulaku..1 tsp ( As required )
* Turmeric powder/Haldi/Manjal powder..A pinch
* Green chillies...........................................2 nos
* Curry leaves/Currypatta/Kariveppila.....1 Sprig Finely chopped
* Coconut oil/Any refined oil....................3 to 4 tbsp
* Salt/Namak/uppu.


DIRECTIONS:


1. Heat a pan with 2 tbsp coconut oil,  Add  finely chopped onion, finely chopped green chillies and fry till transparent. Add  a pinch of turmeric powder, stir for a few seconds. Mash boiled potatoes and add it to the fried onions. Add 2 tspns chilli powder, salt and stir for 3 to 4 minutes.

2.  Break the eggs into a Bowl, Beat eggs well and add a little salt and the above potato mixture. Stir thoroughly. 

3. Heat a pan with 2 tbsp coconut oil and pour the above mixture. Spread it if necessary. Sprinkle finely chopped curry leaves and little pepper powder on it. When one side is cooked turn the Omlette carefully to the other side and cook for 1 or 2 minutes. Now Urulakizhangu Omlette / Potato Omlette is ready. Serve immediately.  Enjoy ........

TIPS:

* Add chilli powder, green chillies and pepper powder as per your taste.
* When turning the Omlette do this carefully, If the Omlette is very heavy, you'll not be able to turn it properly ).
* Cook the Omlette in a medium flame.
