PORK ULARTHIYATHU/PORK STIR FRY

SUMMARY:


This is my another most favourite non veg recipe. I remember having this tasty dish made by my friend during my army days in Punjab. Even now I can feel the great fragrance and wonderful taste. I made it first time in my wife's house where fresh pork can buy from nearby market. It came out very well. Now this is here,  I am posting this delicious pork ularthiyathu for every one... Please try it and enjoy.................With regards.............


INGREDIENTS:


 * Fresh Pork without outer skin........................1 kg ( Cut into pieces )
* Shallots/ Cheriya ulli.......................................One hand full
* Green chillies cut into length wise.................5 nos
* Ginger/garlic paste.........................................2 tbsp
* Red chilli powder...........................................2 tbsp
* Pepper powder...............................................1 tsp
* Turmeric powder...........................................1/2 tsp
* Coriander Powder.........................................5 tbsp
* Garam masala powder..................................2 tbsp
* Mustard seeds ( Optional )............................1/2 tsp
* Curry leaves..................................................2 Sprigs
* Coconut oil/ Any refined oil
* Salt to taste.


To marinate:
 * Chilli powder............................................2 tbsp
* Coriander powder.....................................3 tbsp
* Turmeric powder.....................................1 tsp
* Lemon juice............................................2 to 3 tsp
* Salt.


DIRECTIONS:


1. Cut pork into medium size pieces, remove outer layer of the skin, Wash well and keep it aside.

2. Mix all ingredients ( Chilli powder 2 tbsp, Coriander powder 3 tbsp, Turmeric powder 1 tsp, Lemon juice 2 to 3 tsp, Salt.) to marinate, Add cut pork pieces and mix well.

3. Marinate the pork for 1/2 an hour.

4. Cook the pork with 3 to 4 cups of water till it cooked well in a pan. 

5. Heat oil in a pan and crackle mustard seeds, add sliced shallots and curry leaves. 

6. When shallots is become soft add green chillies, ginger-garlic paste and saute it for 2 minutes.

7. Add lightly roasted 5 tbsp coriander powder, 1/2 tsp turmeric powder, 1 tsp pepper powder, 2 tbsp red chilli powder, 2 tbsp garam masala powder, salt and saute it for 1 minute.

8. Now add cooked pork and mix it well and saute it in a medium flame till pork is dry. Serve hot with sliced onion.

TIPS:

 * Add pepper powder and chilli powder as per your taste.
* Marinate the pork in the refrigerator if possible.
* If you like, you can fry the pork till dry well and becomes dark brown.

PORK CURRY KERALA STYLE


This is a delicious recipe of Kerala. Kerala style pork curry is little spicy and in rich  thick gravy. I am a fan of pork curry, pork stir fry, pork vindaloo etc...I really enjoy with pork stir fry..but pork curry is different taste and having thick gravy and spicy, It is best combo with rice, chapathi, poori etc..Whenever I get a chance to buy non Veg, I go for pork. * Pork....................................................1 kg 
* Red chilli powder...............................6 tbsp
* Black pepper......................................2 tbsp
* Coriander powder.............................6 tbsp
* Turmeric powder..............................1 tsp
* Garam masala..................................3 tbsp
* Ginger finely chopped.....................1 tbsp
*Garlic finely chopped......................1 tbsp
* Onion finely chopped.....................2 nos
* Tomato cut into small pieces.........2 nos
* Vinegar..........................................2 tsp
* Soya sauce....................................2 tsp
* Curry leaves.................................2 sprigs
* Coconut oil..................................3 tbsp
* Salt to taste.

                                            DIRECTIONS

1. Cut Pork into medium size pieces. Wash and Keep aside.

2. Cook the Pork along with 1/2 tsp turmeric powder, 2 tbsp roasted coriander powder, 2 tbsp roasted chilli powder, 2 to 4 cups of water and some salt. 

3. Heat a pan with 3 tbsp coconut oil. Add finely chopped ginger-garlic and stir for a few seconds. Add curry leaves,  finely chopped onion and saute on medium flame till golden brown.

4. Now add roasted 4 tbsp coriander powder, 4 tbsp chilli powder, 1/2 tsp turmeric powder, 2 tbsp pepper powder, garam masala powder saute it in a low flame. Please take care that don't burn the masala.

5. Add tomato pieces and salt and saute it in a medium flame till the tomatoes get mashed up.

6. Now add the cooked pork, vinegar, soya sause stir it well with the masala for 5 minutes so that pork is completely soaked in the masala. When done, remove from the flame.

7. Serve hot with rice, chapathi etc...

* Take pork without outer skin. If you take pork with outer skin, after cooking the pork you can see a lot of oil from it. 
* Adjust chilli powder as per your taste.
