KOZHI VARUVAL / CHICKEN VARUVAL KERALA STYLE

Kozhi Varuval / Chicken Varuval Kerala Style is a special type of very spicy Chicken fry. It tastes great. I think it is a rare preparation in Kerala. I got it from a T.V cookery show. As you knew there is a lot of variety of chicken fry. It is a different type of chicken varuval. Don't forget to try this super tasty recipe. A couple of times I prepared this recipe. The flavorful chicken varuval is the use of ghee. Serve hot for the true flavour of this chicken varuval Kerala style. Please try it and enjoy...................With regards..........

INGREDIENTS:
  
* Chicken without skin...........................1 kg ( Cut into medium sized pieces )
* Turmeric powder................................1 tbsp (For washing the medium sized chicken pieces )
* Finely chopped onion..........................2 nos
* Green chillies.......................................6 to 8 nos ( Slit lengthwise )
* Ghee......................................................4 tbsp
* Cashew nut............................................15 nos
* Dry chillies............................................4 ( Cut into 2 to 3 pieces)
* Crushed Kashmiri chillies....................5 tbsp full
* Tomato....................................................2 nos ( Cut into 6 to 8 pieces lengthwise )
* Coriander powder.................................2 tbsp
* Chilli powder.........................................1 tsp
* Pepper powder......................................1 tsp
* Turmeric powder..................................1/2 tsp
* Garam masala powder..........................1 tbsp
* Soya sauce..............................................2 tbsp
* Coconut oil.............................................For chicken fry.
* Curry leaves...........................................2 sprigs
* Salt to taste. 


DIRECTIONS:


1. Take chicken pieces in a bowl and add 1 tbsp turmeric powder and water. Mix well and wash the chicken one or two times, Drain water  and keep aside.
2. Take chicken pieces in a bowl and add little salt. Mix it well and set aside.
3. Heat enough coconut oil in a pan. Fry the chicken and set aside.
4. Add finely chopped onion in the remaining oil, fry till light brown and add green chilli, fry for few seconds and set aside.
5. Heat the ghee in a pan. Add cashew nut  and stir it a few seconds and add dry chilli cut by hand , add crushed kashmiri chilli, stir a few seconds and add tomato pieces, fried chicken , fried onion and green chilli. Stir it well.  Add curry leaves, 2 tbsp coriander powder, 1 tsp chilli powder, 1 tsp pepper powder, 1/2 tsp turmeric powder, 1 tbsp garam masala powder and salt. Stir it well for a minute. Add 2 tbsp soya sauce and stir well. Now Kozhi Varuval/Chicken Varuval Kerala style is ready. Serve hot with rice, chapathi, poratta etc...


TIPS:

* Adjust the chilli as per your taste.
* Make sure the chicken is properly fried.
* Watch the oil so it doesn't get too hot, Too hot of an oil risks burning chicken or cooks only outside.
* Handle hot oil carefully and keep your face away from the oil while frying.

Chicken fry Kerala style is a tasty and  easy recipe. I think Chicken fry is truly irresistible for most of us. This can be baked or grilled but wouldn't taste like fried ones. This little spicy chicken fry is a good combo with plain rice, fried rice, chapathi etc...Please try this delicious chicken fry Kerala style. With regards.................. 

INGREDIENTS:

* Chicken.....( Cut into medium size ).......1 kg 
* Chilli powder..........................................3 tbsp
* Coriander Powder..................................2 tbsp
* Turmeric powder...................................1/2 tsp
* Black pepper powder............................1 tbsp
* Chicken masala powder.......................1 tbsp
* Salt to taste
* Eggs.....................................................2 nos
* Yogurt.................................................2 tbsp
* Onion..................................................3 nos
* Green chilli........................................5 nos
* Curry leaves.......................................2 sprigs
* Ginger paste.......................................1 tbsp
* Garlic paste........................................1 tbsp
* Ginger finely chopped........................1 tbsp
* Garlic finely chopped........................1 tbsp
* Tomato sauce.....................................3 tbsp
* Chilli powder......................................1 tbsp
* Coriander powder...............................1/2 tbsp
* Garam Masala powder....................................1 tsp
* Coconut oil.

DIRECTIONS:

1. Combine well with 3 tbsp chilli powder, 2 tbsp coriander powder, 1/2 tsp turmeric powder, 1 tbsp pepper powder, 1 tbsp  chicken masala powder, salt, 2 eggs( Crack the eggs and beat lightly ), 2 tbsp yogurt, 1 tbsp each ginger-garlic paste. Mix well this paste with 1 kg chicken pieces.

2. Marinate for 30 minutes. ( Referigerate for about 1/2 an hour )

3. Heat the oil in the deep frying pan and fry the chicken in a medium flame and set aside. Cook chicken thoroughly. Watch the oil so it doesn't get too hot, too hot of an oil risks burning the chicken or cooks only outside.

4. Heat a pan with oil and add finely chopped onion saute it for a minute and add green chilli, finely chopped ginger-garlic, curry leaves, stir it for seconds..and add 1 tsp  garam masala powder, 1 tbsp chilli  powder, 1/2 tbsp coriander powder stir it well and add 3 tbsp tomato sauce.

5. Add fried chicken and mix it well for a minute. Now Chicken fry Kerala style is ready. Serve hot with rice, Chapathi, etc....

TIPS:

* Fry the chicken in a small batches.
* Ensure chicken cooked thoroughly. Improperly cooked chicken 
can cause food poisoning.
* Treat hot oil with the utmost care. Keep your face away from the oil. 
* Fry the chicken for about 8 to 10 minutes each side. They can be removed when they are golden brown.

SPICY CHINESE CHICKEN CURRY KERALA STYLE

Summary:

Today I have decided to post Spicy Chinese Chicken Curry Kerala Style, Which I got an idea from   a cookery show in Tv. As the name shows This recipe won't fit under the Tradational Chinese Chicken. I don't know Whether Authentic Chinese Chicken recipe altered and making it in Kerala style ( My Style ) is a good idea?!. Anyway this is something that I used to make whenever I get a chance with my sisters kids. It is a fantastic food and easy to make too. In this I have used green chillies, coriander powder,tomato,red chilli powder,Turmeric powder etc..Which may don't use normally. So it is a total mixed stuff. Made this about a few times and now it is one of my favourite recipe.I hope you will also like it and you must try it. Cheers.

  
  

  
  
  
Ingredients:
  
                                         Part- 1
  
Skinless Chicken                       500 gm 
Ginger-Garlic paste                   2 tbsp
Turmeric Powder                        1/2 tsp
Pepper Powder                            2 tsp
Red Chilli Powder                       1 tsp
Beaten Eggs                                2 nos
Corn Flower                                 3 to 4 tbsp
Salt to taste.
  
  
                                        Part- 2
  
Onion                                            3 nos (Medium size, Sliced lengthwise)
Ginger-Garlic Paste                     1 tbsp
Ginger-Garlic                               1 tsp ( Cut into very small pieces )
Tomato                                         3 nos
Pineapple                                     5 to 6 tbsp ( Finely Chopped )
Sugar                                           1 or 2 tsp
Green Chillies                             3 nos ( Just cut length wise )
Capsicum                                    3 nos ( Chopped )
Tomato Sause                            5 tbsp OR adjust according to you.
Chilli Sause                                4 tbsp OR adjust according to your spicy level.
Soya Sause                                4 tsp
Coriander Powder                      1 tsp
Pepper powder                           2 tsp
Coconut Oil /Any Oil
Salt to taste.
  

Directions:
  
  
1. Clean the chicken, cut into pieces.
2. Combine 1st parts ingredients in a bowl. Add chicken and stir until well coated. Marinate for 30 minutes.
   
  
  

3. Heat oil in a pan and fry the marinated chicken and set aside.
FRY CHICKEN
  

4. Heat a pan with 2 tsp sugar. When it become dark brown, Add chopped onion and 1 tsp oil, stir  for 2 minutes. Set aside.
5. Heat the same pan with 1 tsp oil, Add ginger-garlic pieces and paste stir a few seconds, Add 2 tsp pepper powder, 3 nos green chilli, 1 tsp coriander powder, 3 nos chopped capsicum, 3 nos chopped tomato and 5 tbsp chopped pineapple. Saute for two minutes. Add fried onion and Add 2 glass (medium) boiled water. Stir well for 2 minutes. Add 5 tbsp tomato sauce,4 tbsp soy sauce,4 tbsp chilli sauce.
TOMATO SAUSE,CHILLI SAUSE,SOY SAUSE
  
  
6. Add fried chicken and allow to boil for  2 to 3 minutes and finish the cooking. Now Spicy Chinese Chicken Curry Kerala Style is ready.  
* Serve with steamed rice, fry rice, chappati / rotti.  

Tips:

* You can add 1 glass of water instead  of  2 glass-As your taste.
* At end of the dish it is always seen thick enough.

KADAI CHICKEN

Kadai Chicken literally means Chicken cooked in a Kadai. Kadai is a Indian cooking pot.I got this recipe from a family friend. I have made it 1-2 times and it came out well. Hope you will also like it. This spicy Chicken dish is a good compo with Chapathi/ Roti/ Naan/ Rice/ Fried Rice etc...Here is the recipe.

Prep Time: 20 minutes
Cook Time: 30 to 40 minutes.
KADAI CHICKEN

   

Ingredients:
   

1 kg Chicken  
4 tsp Red chillie powder/Lal Mirch powder/Chuvanna Mulaku powder
3 tsp Coriander powder/ Dhaniya powder/Kothamalli powder
1 tsp Lemon juice/Nimbu/Cherunaranga
300 gm Cocanut oil
12 flakes Garlic/Lasun/Veluthulli  
2 inch Ginger/Adrak/Injee
50 gm Butter/Makhan/Venna
7 Red Chillie/ Lal Mirch/Chuvanna Mulaku
25 gm Raisins/Dry Angoor/Dry Munthiri
25 gm Cashew nut/Kaju/Kasuandi parippu
5 tbsp Thanthuri Masala
5 tbsp Chat Masala
5 tbsp Garam Masala
2 tsp Tumeric powder/Haldi powder/Manjal powder
1tsp Black Pepper /Kali mirchi /Kurumulaku
1 Cocanut (Grated)
1/2 kg Tomatoes
25 gm Cinnamon/Dalchini/Karuvapatta
20 gm Cloves/Lavang/Grambu
4 nos Onion//Piaz/Ulli (Savala)
3 tbsp Curry leaves/Currypatta/Karivepila
3 tbsp Coriander leaves/Kotmir/Kothamalli ela
Salt to taste.

Method:
  
1.Heat a pan with coconut oil. Add one part of ginger-garlic paste, curry leaves, grated coconut stir well for 3 minutes and add 2tsp Chilli powder, 1 tsp turmeric powder and coriander powder stir a minute and set aside.
2. Heat the oil in a pan. Add finely chopped onion and stir till it become light brown. Add chopped tomatoes stir till it become light soft.
3. Grind onion, tomatoes, Black pepper, Cinnamon and Cloves.
4. Take a kadai with 3 glasses of water, heat it and add 1st and grinded iteams, Add salt to taste. Cook it till boil. Now gravy is ready.
5. Cut the Chicken into medium size pieces and clean it well. Marinate chicken pieces with little salt, 1 tsp turmeric powder and 2 tsp chillie powder for 15 minutes.
6. Take a pan with coconut oil, heat it , fry the chicken in a medium flame till it light brown.
7. Take a kadai with butter and heat it. Add ginger-garlic pieces,red chillie(cuted lengthwise) stir a minute and add Thanthuri masala, Garam masala and Chat masala. Stir in a medium flame. Add fried Chicken, gravy and lemon juice. Cook for 5 minutes and turn off the flame.
8. Transfer the kadai Chicken to the serving bowl and garnish with coriander leaves, raisins, cashew nuts.
   
Tips:
1. If you don't have garam masala add chicken masala.
