Ingredients :
Eggs / Mutta.......................................................................... 3 nos
Drum Stick Leaves / Muringa Ela...................................... 2 cups
Ginger finely chopped.......................................................... 1 tsp
Tomato finely chopped.........................................................1 no
Green chillies finely chopped................................................4 nos
Chilli powder..........................................................................1 tsp
Onion finely chopped.............................................................1 no
Coconut oil..............................................................................2 tbsp
Salt to taste.
Directions :
1. Heat a pan with 2 tbsp coconut oil. Add finely chopped ginger, green chillies, onion, saute it a minute.
2. Then add chilli powder, finely chopped tomato and saute it a minute.
3. Add drum stick leaves and stir well for 4 to 5 minutes.
4. Add 3 beaten eggs with little salt and stir well for 3 to 4 minutes. Now Mutta Muringa Thoran is ready. Serve hot.

* You can use shallots instead of onion
* For more color use Kashmiri chilli powder
* Sprinkle 1 tsp coconut oil for flavour ( Optional )
