SUMMARY :
Onam, Kerala's ( South India ) grand festival is just over. Festival season is a time for fun, good food and more......Cooking, sharing and eating is the joy of the season. Pachadi is a Kerala tradational and Onam recipe. Pachadi is an essential dish at Onam festival and Kerala Sadya ( Grand Feast ), Wether it is special occations, holidays, weddings etc.., besides it, a lot of other Onam recipes are there.....( Kitchadi, Thoran, Avial, Kuttucurry, Olan, Kalan, Inchicurry, Pulissery, Sambar, Rasam, Ada Pradhaman, Palpayasam etc.....). Pachadi can make from different vegitables like, bitter gourd, lady's finger, cucumber, mango, ginger, beetroot etc...
There is a mythological story about the orgin of Onam Festival. Mahabali was a good and noble king and he was a devotee of god Maha Vishnu. God Maha Vishnu wanted the people to know the greatness of king Mahabali's devotion to Maha Vishnu. So one day, God Maha Vishnu took the form of a brahmin called Vamana requested King Mahabali to give him " Three feet of land " so that he could sit there. Mahabali granted Vamana's request and asked him to take " Three feet of land " from any place he liked.Suddenly Vamana grew very big and tall. He was so huge that his head touched the sky. He measured the whole world with two steps and asked King Mahabali where he should place his third step..?, With folded hands King Mahabali bowed before Vamana ( God Maha Vishnu ) and said " Oh God please place your foot on my head ". God Mahavishnu placed his foot on King Mahabali's head and blessed him.King Mahabali decided to go down to the lower world. Before going to the lower world, king Mahabali requested god Maha Vishnu to permit to visit the earth once a year so that he could see his people. God Maha Vishnu granded his request. Since then king Mahabali has been visiting his people every year on Thiruvonam day. We welcome Mahabali's visit every year with enthusiasm and great happiness.
Onam festivel is celebrated in order to welcome king Mahabali and to remember his greatness as a king and as a devotee. King Mahabali was so just and noble that under his reign everybody was honest. There was no cheating, There was no stealig, Nobody told lies and everybody was happy. With regards.............
INGREDIENTS :
* Bitter gourd ( Finely chopped )..................................................1 ( 1 cup )
* Coconut ( Grated and grinded ).................................................1/2 ( 1 cup )
* Mustard seeds ( grinded )...........................................................1 tsp
* Cumin seeds ( grinded ).............................................................1/2 tsp
* Yogurt ( Curd )..........................................................................1 cup
* Curry leaves..............................................................................2 sprigs
* Green chilli ( Finely chopped )...............................................6 nos
* Ginger paste.............................................................................1/4 tsp
* Coconut oil..............................................................................3 tbsp
* Salt to taste.
DIRECTIONS :
FRESH BITTER GOURD |
1. Heat a pan with 2 tbsp coconut oil, Add finely chopped bitter gourd and stir well till it become light brown and set aside.
FINELY CHOPPED BITTER GOURD |
2. Heat a pan with 1 tbsp coconut oil and add finely chopped green chillies, curry leaves, stir it . Add grinded coconut, cumin seeds paste, mustard seeds paste and ginger paste. Add 1/2 cup warm water, salt and stir well for a minute in a medium flame. When it start boil, Add 1 cup yogurt. Stir it well and finish the cooking when it become light boil. Now the " Pachadi " Onam recipe is ready to serve.

TIPS :
* Don't deep fry the bitter gourd.
* Don't allow to boil much after adding coconut paste and yogurt.
